老通城的三鲜豆皮是武汉人“过早”的主要食品之一,也是武汉民间极具特色的传统小吃。其形方而薄,色金而黄,味香而醉,最初是武汉人逢年过节时特制的节日佳肴,后来成为寻常早点
老通城豆皮制法:将黄豆、大米混合磨浆,在锅里摊成薄皮,内包煮熟的糯米、肉丁、鲜蛋、鲜虾仁等馅料,用油煎制而成。其皮金黄发亮,入口酥松嫩香。
制作方法:
1.制馅:卤猪舌,精猪肉,鲜笋,虾仁,香菇,黄豆,豆腐干等切成丁。
2.蒸饭:糯米淘净,浸泡10小时蒸熟。
3.制豆皮:秈米、黄豆(2∶1)分别淘净,各放水中浸泡10小时混合一起,带水磨成糊待用。制豆皮时,先在热锅上抹点素油,倒入豆皮糊料,摊成蛋皮状豆皮,见豆皮呈乳白带黄时,磕入鸡蛋2只捣散,刷在豆皮上,再在豆皮外圈淋上少许熟油。

4.成型:将整张豆皮翻身,有蛋一面朝底,辅上一层糯米饭,撒上少许细盐、味精,然后均匀地铺上馅芯,用刀将其割成10分,逐一翻身(有馅一面朝底,有蛋一面朝上),淋以熟油,用小火焖片刻即可装盘出售。
